An attempt to prep all meals for the week

I am fascinated with Rachel Ray's new show Week in A Day. I'm a huge fan of prepping and planning, but the thought of preparing all of my meals on Sunday is a little overwhelming yet exhilarating at the same time. My first attempt wasn't perfect, but I think Rachel Ray could be on to something. Here's my menu and plan for the week:

Note: Our family likes rather plain food with only a few ingredients. I happened to have a lot of carrots on hand this week. I used a lot of recipes from Deceptively Delicious this week. Those dishes are noted with a (*).

Monday: Homemade Chicken Nuggets* and Pasta Salad with lots of veggies. Done-prepared all of this on Sunday.

Tuesday: Meatloaf* and steamed carrots. Edimame as a pre-dinner snack. Done-prepared all of this on Sunday.

Wednesday: Salmon on the grill and couscous rice with pureed carrots and squash*. Pureed vegetables are ready. Just need to make rice and throw salmon on the grill.

Thursday: Grilled Cheese* and Sweet Potato French Fries. This one will take the most time. I may cut up the sweet potatoes the night before to see if this will help.

Friday: Turkey Taco's with whole wheat soft shell and a salad. Can pull this off in 20 minutes.

Dessert: low fat vanilla yogurt ice cream with bananas, strawberries and pineapple. Fruit was cut up on Sunday so this will only take a few minutes to get ready.

So it looks like my hard work on Sunday will carry me through Wednesday. That's not too bad for a first attempt. With some additional planning, I think I can prep an entire week of healthy meals in one day. I'm determined!! Stay tuned!!
