Healthy Food For A Week: Day 1 Results

One night down and this is turning out to be quite the experience...for me at least!  So after we left the grocery store, my friend rushed home to unpack her groceries.  Little Jake (5 yrs old) pilfered through the bags in excitement...until he noticed the food.  He quickly pointed out that he hated EVERYTHING and wanted to know where the donuts and cookies were.  The healthy challenge was off to a rocky start.

To win the heart and soul of our family, we kicked off a series of healthy meals with homemade pizza.  It's an absolute favorite.  There's no way this could fail.  Right?

The ingredients were simple.  I made the pizza shells in advance and supplied her with two for the night.  We found a low-sodium pizza sauce and part-skim mozzarella cheese.  Healthy Kids Inc ("HKI") needed a win, so this clearly wasn't the time for experimentation with vegetables.  Plain pizza it was!

To get little Jake on board, Mom asked for his help making the pizza.  Nice job!  That's bonus points for Mom.  Having your kids assist in the cooking process is a great way to get their buy in.   Not only did Jake enjoy the preparation but THEY ALL LOVED THE PIZZA!  Woo Hoo! Homemade pizza was a success.

That's 2 points for HKI and 0 points for Junk Food (not that we're keeping score or anything).

Tonight they are testing grilled chicken, orzo, and edamame.  This is their first time making real chicken and my friend had never heard of orzo or edamame.  I may not sleep tonight in anticipation.  Stay tuned!
