Healthy Food for a Week: Day 4 Results

We're up to day 4 of our challenge.  By design, we structured days three and four to be really easy.  We knew a few easy days would give them the motivation to make it to Thursday- homemade chicken nuggets.

 Last night was spaghetti with whole grain noodles and an organic sauce.  She paired that with a whole wheat roll.  Whole grain pasta was another first for the family.  Up to now, mom hasn't been able to sneak a thing past these kids.  They can spot a different color, smell, look or texture from a mile away.  I'm excited to announce that the kids didn't even notice the difference in noodles.  Dinner was a hit.  WooHoo!  Nice job mom!

Whole wheat or whole grain pastas are a nice alternative to traditional white pastas.  Include a low-sodium or even homemade tomato sauce and you've managed to pull off a much improved meal.

I have to give my friend lots of credit. She's hanging in there and not giving up.  Four days of new foods and most importantly without fast food, is a huge step in their right direction.

One more day to go.  I hope the culinary gods are watching over her tonight.  She needs all the help she can get on this one.
